Heckers Ceresota All Puropose Flour. Unbleached Forever!

  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon sugar
  • 2 cups Ceresota Unbleached Flour
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  1. Stir the yeast and ½ cup plus 1 tablespoon warm (110°) water and set aside for 5 minutes.
  2. Stir the sugar and salt into ½ cup cool water.
  3. Using a mixer with a dough hook, place the flour in the mixing bowl.
  4. With your mixer on low speed, stream in the yeast, and sugar and salt water mixtures, until all the flour is thoroughly wet and a sticky dough has formed (approximately three minutes). Turn off mixer and let the dough sit for a few minutes.
  5. Turn the mixer back on low and stream in the oil and mix until a soft non-sticky dough is formed (approximately three to four minutes).
  6. Remove dough, place on a lightly floured surface and knead for two minutes.
  7. Shape into a ball by folding under the edges; pinch together the underside of your ball.
  8. Place dough ball in an oiled container (large enough for ball to more than double in size and with a tight sealing lid); lightly oil outside of the ball and place lid on bowl. Refrigerate for a minimum of eight hours, to a maximum of 48 hours.
  9. Remove from refrigerator one hour before using letting the dough warm to room temperature.
